Rib Eyes with Blue Cheese Butter

- 4 rib eyes
- .
- -- Spice Rub --
- 4 Tbsp kosher salt
- 2 Tbsp paprika
- 1 Tbsp pepper
- 1½ tsp onion powder
- 1½ tsp garlic powder
- 1½ tsp cayenne pepper
- ½ tsp coriander-cumin
- ½ tsp turmeric

- -- Blue Cheese Butter --
- ½ cup butter, softened
- 1 package (3 ounces) cream cheese, softened
- 2 tsp jalapeño pepper sauce
- Juice of 1½ lemons
- 4 slices bacon, cooked and crumbled
- 1 tsp snipped fresh chives
- 1 cup crumbled blue cheese
Instructions
- In a bowl, combine all ingredients for the spice rub and mix well. Rub the mixture on all surfaces of the rib eyes, massaging it into the meat until well seasoned. Let meat rest 30 minutes, or refrigerate up to overnight.
- In a separate bowl, mix the butter and cream cheese. Then add the jalapeño pepper sauce and lemon juice. Fold in the remaining ingredients and refrigerate until ready to use.
- Preheat grill to high heat.
Place steaks on the grill and cook for 5 to 8 minutes on each side, or until done to your taste. Remove from the grill and top with blue cheese butter before serving.
