Sauce: Kansas City Barbecue Sauce

â—¦ 1 tablespoon unsalted butter
â—¦ ½ small onion, finely grated
â—¦ 2 cloves garlic, minced
â—¦ Coarse salt and freshly ground pepper
â—¦ ½ cup packed light brown sugar
â—¦ 2 tablespoons unsulfured molasses
â—¦ 1 ½ cups ketchup
â—¦ 1 tablespoon yellow mustard
â—¦ â…“ cup cider vinegar
â—¦ 2 tablespoons Worcestershire sauce
â—¦ ½ teaspoon cayenne
Recipe
In a medium saucepan, melt butter over medium heat. Add onion and garlic; season with salt and pepper. Cook, stirring occasionally, until onion is soft, 2 to 3 minutes. Add brown sugar, molasses, ketchup, mustard, vinegar, Worcestershire, and cayenne. Bring to a simmer.
Cook, stirring occasionally, until thick, about 5 minutes.
(Sauce can be cooled completely and refrigerated in an airtight container up to 2 weeks; reheat over low before serving.)
Makes 1 ½ cups
(enough for two 2 ½-pound rib racks)
