    Side: Janie's Baked Beans

    Source of Recipe

From "The Southern Living Party Cookbook"

    Recipe Introduction

"You have to try this original recipe from the 1972 Southern Living Party Cookbook. I have no idea who Janie is, but I wish we could be friends because it seems we have a lot in common. I am sure you are wondering how in the world I know this. It is very simple: We both put sausage in our baked beans. This fact alone says a lot about us. Note that I said 'sausage' and not 'hot dogs' ... do not be one of those people who puts cut up hot dogs (or, God forbid, Vienna sausages) in the baked beans."

    List of Ingredients

â—¦ 2 pounds ground pork sausage
â—¦ 2 cups chopped yellow onion (from 1 large onion)
    â—¦ 2 (28-ounce) cans baked beans, undrained
â—¦ ¾ cup packed light brown sugar
    â—¦ ½ cup yellow mustard
    â—¦ ¼ cup molasses
    â—¦ 1 tablespoon dry mustard
    â—¦ 1 teaspoon salt
    â—¦ ½ teaspoon black pepper

    Recipe

Preheat the oven to 350° F.

Cook the sausage and onion in a large ovenproof Dutch oven over medium-high until the sausage is browned, stirring to crumble. Remove from the heat; drain the sausage mixture in a colander. Return the sausage mixture to the Dutch oven, and stir in the beans, brown sugar, yellow mustard, molasses, dry mustard, salt, and pepper.

Cover and bake the beans in the preheated oven for 1 hour.
Uncover and cook until thickened, 25 to 30 more minutes, stirring after 10 minutes. Let stand 15 minutes before serving.

    Serves about 25
