Sauce: Spicy Barbecue Sauce
Source of Recipe
From "Williams-Sonoma: Cooking at Home"
Recipe Introduction
"This bold sauce is decidedly spicy, thanks to a generous dose of Tabasco sauce added to the base. If you like your food even better, substitute a spicier hot sauce for the Tabasco. Use this with grilled chicken, fried chicken wings, barbecued ribs, or pulled pork."
List of Ingredients
1 tablespoon olive oil
1 small yellow onion, finely chopped
1 cup canned tomato purée
3 tablespoons Dijon mustard
¼ cup fresh lemon juice
¼ cup firmly packed light brown sugar
2 tablespoons Worcestershire sauce
2 tablespoons Tabasco sauce
¼ teaspoon each ground allspice and ginger
Salt and ground pepper
Recipe
In a saucepan over medium heat, warm the oil. Add the onion and sauté until golden, about 10 minutes.
Add the tomato purée, mustard, lemon juice, brown sugar, Worcestershire sauce, Tabasco sauce, allspice, ginger, and ¼ cup water to the pan and season with salt and pepper. Bring the sauce to a boil, reduce the heat to low, and simmer gently, uncovered, until reduced and thickened, 5 to 10 minutes.
Use the sauce right away, or let cool, cover, and store in the refrigerator for up to 1 week.
Makes about 2 cups
