Steak and Onions with Blue Cheese Butter

- 2 Tbsp butter, room temperature
- 2 Tbsp blue cheese or Gorgonzola cheese, crumbled
- 2 tsp chopped fresh chives

- 1 jumbo red onion, peeled
- 1 Tbsp olive or vegetable oil
- 1 Tbsp Worcestershire sauce
- 4 beef tenderloin steaks, about 1 inch thick (about 1 pound)
- ¼ tsp salt
- 1/8 tsp pepper
Instructions
- Prepare blue cheese butter by mixing together butter, blue cheese and chives in small serving bowl. Cover and refrigerate about 30 minutes, or until firm.
- Heat coals or gas grill for direct medium heat. With the stem end up, pierce onion horizontally with eight 4-inch metal or wooden skewers, poking skewers through onion so they are parallel and at ½-inch intervals. Turn onion on its side and cut onion between skewers into 8 slices (skewers will hold the onion slices together).
- Brush oil and Worcestershire sauce on onion slices and steaks. Sprinkle steaks with salt and pepper. Place skewered onion slices on hot grill; close grill and cook 4 to 5 inches from heat 5 minutes. Turn onions; add beef to grill. Cover and grill 7 to 12 minutes, turning beef once, until beef is to desired doneness.
Top beef with blue cheese butter. Serve with onion slices.
