Tequila Shrimp and Citrus

List of Ingredients
- 1-1/2 lbs. large, fresh shrimp
- 1/4 cup tequila
- 2 Tbsp chopped fresh cilantro
- 2 Tbsp frozen orange juice concentrate, thawed
- 2 Tbsp fresh lime juice
- 2 cloves garlic, minced
- 1 jalapeño pepper, seeded and minced
- 1/2 tsp salt
- 1 red bell pepper, cut into 1-inch pieces
- 1 orange, cut into 1/2-inch wedges
- 1 lime, cut into 1/2-inch wedges
Instructions
- Soak 8 (10- to 12-inch) skewers for about 30 minutes. Peel and devein shrimp. Stir together tequila and next 6 ingredients in a large bowl. Add shrimp; cover and chill 30 minutes.
- Alternately thread shrimp, bell pepper, orange and lime wedges onto skewers.
- Grill, covered with grill lid, over medium-high heat (350º to 400º F) for 5 to 6 minutes on each side, or until pink and done.
Makes 4 servings.
