Recipe Introduction
"There's really no secret to grilling a great Texas-style burger. Start with ground chuck that is 20 percent fat, round out a few quarter-pound patties by hand - making sure not to compress the meat too much - sprinkle with salt and pepper, and grill them over a hot charcoal fire. To serve them in keeping with a tradition started by Texas-based fast-food chain, Whataburger, add a smear of classic yellow mustard. Jalapeños are also a Texas must, whether pickled or fresh."
List of Ingredients
• 1½ pounds ground chuck
• 2 Tbsp Worcestershire sauce
• 1 Tbsp Texas Meat Rub (recipe follows)
• 4¾-ounce slices longhorn-style Cheddar cheese *
• 1 medium jalapeño pepper, thinly sliced
• 4 hamburger buns
• ¼ cup butter, softened
• Toppings: coarse-grained mustard, leaf lettuce, sliced tomatoes, red onion slices
Recipe
Preheat grill to 350° to 400°F (medium-high) heat. Shape ground chuck into four 4-inch patties. Drizzle patties with Worcestershire sauce, and sprinkle with Texas Meat Rub. Let stand 15 minutes.
Grill patties, covered with grill lid, 2 to 3 minutes on each side or to desired degree of doneness; top with cheese. Grill, covered with grill lid, until cheese melts. Remove from grill; top with jalapeño, and let stand 5 minutes.
Butter buns and toast on grill. Serve patties on toasted buns with desired toppings.
Makes 4 servings
Texas Meat Rub:
Stir together ¼ cup salt, ¼ cup ancho chile powder, ¼ cup garlic powder, ¼ cup onion powder, ¼ cup seasoned salt, ¼ cup freshly ground black pepper, and 2 tablespoons paprika until well blended. Store in an airtight container for up to 1 year.
