Source of Recipe
From "The All-American Cowboy Cookbook"
List of Ingredients
- 1 lb. swordfish fillets, boned and cut into 1" pieces
- 2 Tbsp soy sauce
- 2 Tbsp orange juice
- 1 Tbsp oil
- 1 Tbsp catsup
- 1 Tbsp chopped fresh parsley
- 1 small garlic clove, chopped
- 1/2 tsp fresh lemon juice
- 1/4 tsp dried oregano, crumbled
- 1/4 tsp freshly ground pepper
Instructions
- Arrange swordfish in a single layer in a shallow baking dish. Combine all remaining ingredients in a small bowl and mix well. Pour over fish, turning to coat well. Let stand at room temperature, turning once, for 30 minutes.
- Preheat broiler or prepare barbecue grill. Broil or grill fish 4 inches from heat source for 8 minutes. Baste with sauce, turn, and continue cooking until fish flakes easily with a fork -- about 7 to 10 minutes.
Serve over rice.
Makes 2 to 3 servings.
