Grilled Whole Trout with Peppered Bacon

List of Ingredients
- 4 fresh, dressed trout, heads and tails intact or removed
- Olive oil
- Thyme sprigs
- 4 thick-cut slices peppered bacon
- 2 lemons, cut in wedges
Instructions
- Brush trout lightly with olive oil. Place a thyme sprig inside each fish. Wrap with a strip of bacon.
- Place in a hinged grill basket and cook over medium-hot coals, until the bacon is crispy and the trout is tender and will flake when the flesh is gently prodded with a fork, about 5 minutes per side. Serve with lemon wedges.
Makes 4 servings.
