    Grilled Whole Trout with Peppered Bacon

    List of Ingredients


    • 4 fresh, dressed trout, heads and tails intact or removed
    • Olive oil
    • Thyme sprigs
    • 4 thick-cut slices peppered bacon
    • 2 lemons, cut in wedges


    Instructions


    1. Brush trout lightly with olive oil. Place a thyme sprig inside each fish. Wrap with a strip of bacon.

    2. Place in a hinged grill basket and cook over medium-hot coals, until the bacon is crispy and the trout is tender and will flake when the flesh is gently prodded with a fork, about 5 minutes per side. Serve with lemon wedges.

      Makes 4 servings.
