Carbonated: Homemade Ginger Ale

"I make my own root beer using cinnamon, ginger, and vanilla — in ginormous batches, usually 12,000 bottles at a time. But you can make other soda pops at home in much smaller batches than that. Here's how to make your own homemade ginger ale, which is much more flavorful than store-bought, because it's the real thing."
List of Ingredients
â—¦ 1 cup sugar
â—¦ Twelve â…›-inch slices peeled fresh ginger root
â—¦ 2 drops pure vanilla extract
â—¦ 1 quart seltzer water (or club soda if you prefer a bit less sharpness)
Recipe
In a saucepan, combine the sugar and ginger slices with 1 cup water and bring to a boil.
Turn the heat off, let cool, add the vanilla, and use immediately or refrigerate the ginger simple syrup until ready to use, up to 2 weeks.
To serve, place ¼ cup of strained ginger simple syrup into each of four glasses over ice, then top each glass off with 1 cup of the seltzer.
