    Carbonated: The Perfect Cream Soda

    List of Ingredients


    • 1 cup sugar
    • 1 cup water
    • 1 vanilla bean, split lengthwise
    • 2 Tbsp vanilla extract, or to taste
    • Soda water


    Instructions


    1. To make vanilla syrup: Combine the sugar and water in a medium saucepan; stir over medium-high heat until sugar is dissolved. Heat to a boil. Add the vanilla bean; boil until syrup thickens slightly, about 3 minutes. Remove from heat; cool. Stir in 2 tablespoons or more vanilla extract.

    2. Remove vanilla bean from syrup; discard. Put 4 tablespoons of the vanilla syrup in a tall glass. Add ice; fill with soda water. Taste, adding syrup if needed.

      Makes about 6 servings.

      ♦ Note:

      You can make cream sodas using just extract: Just add another tablespoon of extract to the simple syrup after it cools.
