    Shake: Malted Milkshakes

    Source of Recipe

From "Once Upon A Chef" by Jennifer Segal

    Recipe Introduction

"Malted milkshakes became popular in the early twentieth century, when drugstores had soda fountains that served at gathering spots during Prohibition. (When people couldn't drink alcohol in bars, they enjoyed soft drinks and ice cream at soda fountains.) Legend has it that in 1922, a Chicago Walgreens employee created the malted milkshake by adding vanilla ice cream to their usual malted milk drink, a blend of milk, chocolate syrup, and malted milk powder. Over time, these milkshakes became wildly popular at soda fountains everywhere. Malted milk powder is made from malted barley extract, wheat flour, and powdered milk. It adds a savory, buttery, toasty flavor to milkshakes—and I add a pinch of salt to bring out that malted flavor even more. My kids are obsessed with these!"

    List of Ingredients

    â—¦ ¼ cup milk
â—¦ ½ cup malted milk powder
    â—¦ 3 tablespoons chocolate syrup
    â—¦ Pinch of salt
â—¦ 1 quart best-quality vanilla ice cream, such as Häagen-Dazs

    Recipe

In a blender, combine the milk, malted milk powder, chocolate syrup, and salt. Blend until smooth.

Add the ice cream and blend just until smooth and creamy.
Do not overmix or the milkshake will get thin. Pour into glasses and serve immediately.

Makes 2 large or 4 small milkshakes

    • Pro Tip:
Make sure your ice cream is not too cold; it should be about the temperature it is when you get home from the supermarket, after it's been out of the freezer for a bit. I usually soften the ice cream in the microwave for 15 to 30 seconds. That way you won't have to add too much milk, and you'll have a nice thick shake.
