    Nog: Jamie & Bobby's Holiday Butterscotch Eggnog

    List of Ingredients


    • 4 cups milk
    • 8 egg yolks
    • 2/3 cup packed light brown sugar
    • 1/8 tsp salt
    • 4 tsp vanilla extract
    • ½ cup heavy cream
    • ¼ cup bourbon (optional)
    • 2 Tbsp brandy (optional)
    • Freshly grated nutmeg, for garnish


    Instructions


    1. Heat the milk to a slow boil in a medium saucepan over medium-low heat. In a large bowl, whisk the yolks and brown sugar until thick. Whisking constantly, slowly pour the milk into the sugar mixture until fully incorporated. Whisk in the salt.

    2. Return the mixture to the pot over medium heat. Cook, stirring constantly with a spatula or wooden spoon, scraping the bottom and sides of the pot, until the mixture is thick enough to coat the back of the spoon, 5 to 10 minutes. Strain through a fine-mesh sieve into a large bowl and allow to cool to lukewarm before stirring in the vanilla.

    3. Whip the cream until soft peaks form and fold it into the custard. Add the bourbon and brandy (if using). Garnish with nutmeg and serve.
