Nog: Jamie & Bobby's Holiday Butterscotch Eggnog

List of Ingredients
- 4 cups milk
- 8 egg yolks
- 2/3 cup packed light brown sugar
- 1/8 tsp salt
- 4 tsp vanilla extract
- ½ cup heavy cream
- ¼ cup bourbon (optional)
- 2 Tbsp brandy (optional)
- Freshly grated nutmeg, for garnish
Instructions
- Heat the milk to a slow boil in a medium saucepan over medium-low heat. In a large bowl, whisk the yolks and brown sugar until thick. Whisking constantly, slowly pour the milk into the sugar mixture until fully incorporated. Whisk in the salt.
- Return the mixture to the pot over medium heat. Cook, stirring constantly with a spatula or wooden spoon, scraping the bottom and sides of the pot, until the mixture is thick enough to coat the back of the spoon, 5 to 10 minutes. Strain through a fine-mesh sieve into a large bowl and allow to cool to lukewarm before stirring in the vanilla.
- Whip the cream until soft peaks form and fold it into the custard. Add the bourbon and brandy (if using). Garnish with nutmeg and serve.
