Tea: Peach Mint Iced Tea

- 2 large ripe peaches
- 2 Tbsp loose Darjeeling tea
- 4 cups boiling water
- 1 cup sugar
- 1 cup water
- 1 handful fresh mint sprigs
Instructions
- Cut peaches in half and remove pits. Squish peaches by hand and add tea. Pour in boiling water. Let steep for 30 minutes, then strain.
- Mix sugar, 1 cup water and mint in a saucepan. Bring to a boil, then strain. Add to peach tea mixture. Shake to mix well.
Serve (chilled) over ice and garnish with mint.
