Spirited: Frozen Watermelon Daiquiri

List of Ingredients
- 2 cups seeded and diced watermelon, frozen
- 4 ounces watermelon-flavored rum
- 3 ounces Simple Syrup (recipe follows)
- 1½ ounces fresh lime juice

- Garnish: watermelon wedges
Instructions
- Combine all ingredients in the container of a blender; process until smooth. Garnish with watermelon wedges if desired.
Makes 2 drinks.

SIMPLE SYRUP
• 1 cup sugar
• 1 cup water
In a small saucepan, combine sugar and water over medium-high heat, stirring constantly. Bring mixture to a boil; reduce heat to low, and simmer for 3 to 4 minutes, stirring constantly. Remove from heat, and cool completely. Pour into an airtight container. Store syrup in refrigerator for up to 3 weeks.
Makes 1½ cups.
