Spirited: Frozen Watermelon Margaritas

- 1 small to medium watermelon
- ½ cup silver tequila
- ¼ cup Triple Sec
- ¼ cup fresh lime juice
- ½ cup sugar
- Kosher salt, to rim glasses
Instructions
- Cut up flesh of watermelon into rough chunks. Reserve some small wedges for garnish, if desired.
- Lightly coat a jellyroll pan with nonstick spray, and spread watermelon chunks in a single layer on the pan. Freeze several hours or overnight.
- In pitcher of your blender, add tequila, Triple Sec, lime juice, 3 cups frozen watermelon, and sugar, in that order. Pulse blender to break down frozen fruit, then whip until blended.
- Invert each margarita glass into a shallow bowl of water just to wet rim, then into a plate of kosher salt. Pour margarita mixture into glasses, taking care not to disturb salt rim.
- Garnish with small wedges of watermelon, if desired, by cutting a slit into side to perch wedge on rim of each glass. Also fun to serve with a few mini chocolate chips for seed effect.
Makes 2 servings
Final Comments
For Strawberry Margaritas:
Clean, stem, and freeze whole strawberries, or use 3 cups frozen in place of watermelon. Rim glasses with a mixture of salt and sugar, and garnish each with a whole strawberry.
