    Spirited: Mango Mimosas

    List of Ingredients


    • 1 firm-ripe mango
    • 1/2 cup orange juice
    • 1 to 2 Tbsp lime or lemon juice (optional)
    • 1/2 cup small ice cubes (optional)
    • 1 bottle chilled sparkling wine


    Instructions


    1. Peel mango and cut fruit from pit into a blender. Add orange juice. Whirl until fruit is smoothly puréed. Taste, and if the flavor is a little flat, add 1 or 2 tablespoons lime or lemon juice. If fruit is at room temperature, also whirl in about 1/2 cup small ice cubes.

      Make mimosas by the pitcher or by the glass. The fruit purée makes the wine fizz madly, so pour slowly and stir down some of the bubbles. In a large pitcher, combine purée and 1 bottle chilled sparkling wine. Or fill glasses (about 1-cup size) about one-third with purée, then add wine.

      Makes 6 to 8 servings.
