    Spirited: Strawberry Jam Daiquiri

    Recipe Introduction

    "Daiquiris are sweet, and as a result, they don't get taken seriously in the cocktail world. I find that if you add the floater of dark rum on top of each glass, it heightens the alcohol note, allowing the fruit and sweetness to take a back seat. Strawberry jam, an untraditional addition, brings a deep cooked-fruit note that heightens the taste of both the strawberries and the rum. I think if we served drinks in metal cups at the restaurant so no one could see what anyone else was drinking, many more of these would be consumed. Make them when strawberries are sweet and in season, which is late June into August in New York (though frozen berries are fine, too)."

    List of Ingredients

    â—¦ 12 ounces frozen strawberries
    â—¦ 7 ounces (¾ cup plus 2 tablespoons) light rum, plus extra if needed
    â—¦ 2 tablespoons strawberry jam
    â—¦ 1 cup sugar
    â—¦ ½ cup fresh lime juice (from 4 to 5 limes), plus extra if needed
    â—¦ Ice cubes
    â—¦ Fresh strawberries, for garnish
    â—¦ Dark rum (optional)

    Recipe

    In a blender, combine the frozen strawberries, light rum, jam, sugar, lime juice, and a few ice cubes and blend until smooth. Taste, and adjust with more lime juice or more light rum if necessary.

    Put a few ice cubes into five highball glasses and fill the glasses with the mixture. Garnish the drinks with fresh strawberries and top with a floater of dark rum, if desired.

    Makes 5 cocktails
    (or 1 pitcher)
