    Tea: Punjabi Tea

    List of Ingredients


    • 4 cups water
    • 4 cups milk
    • One 3-inch cinnamon stick
    • 4 cloves
    • 1 thin slice (about the size of a nickel) fresh ginger
    • 6 green cardamom pods or 2 black cardamom seeds
    • 10 black peppercorns
    • 6 black tea bags, 6 tsp loose tea, or to taste
    • Optional: honey or sugar


    Instructions


    1. Pour the water and milk into a saucepan or aluminum tea pot and bring to a boil. (Watch carefully to keep the mixture from boiling over.)

    2. Add the cinnamon, cloves, ginger, cardamom, peppercorns and tea. Simmer for at least 5 minutes, longer (up to all day) for stronger flavor. As you use up the tea in the pot, you can add more milk and water without adding more spices, getting up to another whole pot.

      Sweeten to taste, if desired, and serve hot.

      Makes 8 one-cup servings.
