    Bacon and Chive muffins

    List of Ingredients


    • 1 cup yellow cornmeal
    • 1 cup all-purpose flour
    • 1 tsp salt
    • 1 Tbsp baking powder
    • 2 large eggs, lightly beaten
    • 1¼ cups whole milk
    • 3 Tbsp warm bacon fat
    • ¼ cup chopped cooked bacon
    • 2 Tbsp fresh chives


    Instructions


    1. Preheat oven to 425° F. Spray a 12-cup muffin pan with nonstick cooking spray. Place in oven for 3 to 4 minutes while oven heats.

    2. In a large bowl, sift together cornmeal, flour, salt, and baking powder. Add eggs, milk, and bacon fat, stirring well to combine. Add bacon and chives, stirring well.

    3. Fill prepared muffin cups three-quarters full. Bake until golden brown, 15 to 20 minutes.

      Makes 12 muffins.
