Banana-Carrot Bread

List of Ingredients
- 1 cup mashed bananas (3 medium)
- 1 cup granulated sugar
- 3/4 cup canola oil
- 2 eggs, beaten
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 2 cups grated raw carrot
- 1/2 cup chopped nuts
Instructions
- Mix together the bananas, sugar, oil and eggs. Stir in the flour, baking soda, salt and cinnamon. Fold in the carrots and nuts; mix all ingredients well.
- Turn mixture into 2 well-greased medium loaf pans. Bake at 350 degrees (F) for 45 minutes or until done. Cool before wrapping. (Freezes well.)
Makes 2 loaves.
