Blueberry Banana Bread

â—¦ ½ cup butter, room temperature
â—¦ 1 cup sugar
â—¦ 2 eggs
â—¦ 1 tablespoon vanilla extract
â—¦ 2 ripe bananas, mashed
â—¦ 2 cups plus 1 tablespoon all-purpose flour, divided
â—¦ 1 teaspoon baking soda
â—¦ 1 teaspoon baking powder
â—¦ ½ teaspoon salt
â—¦ 2 ½ cups blueberries
Recipe
Preheat oven to 350° F.
In the bowl of a stand mixer, cream together butter and sugar until light and fluffy. Add eggs, one at a time, and mix until combined. Beat in vanilla. Add bananas to bowl, mixing until combined.
In a medium bowl, combine 2 cups of flour, baking soda, baking powder, and salt. Stir until combined. Slowly add dry ingredients to banana mixture until just combined. Don't overmix.
Toss blueberries in remaining flour until lightly coated and stir gently into the batter. Pour batter into loaf pan sprayed with nonstick cooking spray or lined with parchment paper.
Bake 55 to 60 minutes or until a toothpick inserted into bread comes out clean. Ovens vary, so watch carefully. Allow to cool completely on a wire rack and enjoy.
Yield: 10 to 12 slices
