Bourbon Banana Bread

- 3/4 cup golden raisins
- 3 Tbsp bourbon or dark rum
- 1-1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp ground cinnamon
- 1/2 cup butter, melted (1 stick; see note)
- 1/2 cup granulated sugar
- 1/4 cup firmly packed brown sugar
- 2 eggs
- 3 very ripe bananas, mashed
- 1 tsp vanilla
- 3/4 cup coarsely chopped walnuts
Instructions
- One hour in advance, bring raisins and bourbon to a rapid boil in a small saucepan. Remove from heat, cover and let stand. The raisins should absorb most of the bourbon; drain before using.
- Preheat oven to 325º F. Grease and flour two 6-inch or one 9 x 5-inch loaf pan. Whisk together the flour, baking powder, baking soda, salt and cinnamon in a large bowl. In a separate bowl, beat the butter with both sugars until fluffy. Beat in the eggs, one at a time, then the bananas and vanilla. Add the flour mixture and stir just enough to blend; fold in the walnuts and drained raisins. Spoon the batter into the pan.
- Bake in the middle of the oven for 60 to 70 minutes, until top is lightly browned and a toothpick inserted in center comes out clean. Cool on wire rack.
Makes 12 servings.

NOTE: Use real butter or stick margarine. Do not substitute reduced-fat spreads; their higher water content often yields less-satisfactory results.
