    Chocolate Chip Banana Bread

    List of Ingredients


    • 2-1/2 cups all-purpose flour
    • 1 tsp baking soda
    • 3/4 tsp salt
    • 1-1/4 cups sugar
    • 1/2 cup vegetable oil
    • 3 eggs
    • 1-1/2 cups mashed ripe bananas (about 3 large)
    • 1/2 to 3/4 cup semisweet chocolate chips


    Instructions


    1. Preheat oven to 325° F. Generously grease 2 loaf pans.

    2. In medium bowl, stir together flour, baking soda and salt; set aside. In large mixer bowl at medium speed, beat sugar, oil and eggs until blended. Add bananas and beat until well blended. At low speed, beat in flour mixture just until blended. Stir in chocolate chips.

    3. Pour batter into prepared loaf pans and bake 45 to 50 minutes, or until a wooden pick inserted in center comes out clean. Cool in pans 10 minutes. Remove from pans and cool on wire racks.

      When cool, wrap in plastic wrap, then foil. Store overnight before serving. Slice with a sharp knife.

      Makes 2 loaves
      (12 slices per loaf)



    Final Comments


    Bread may be made in 6 small loaf pans. Reduce baking time by 10 minutes.
