Chukar Cherry Scones

List of Ingredients
- 1/2 cup dried cherries
- Apple or grape juice (enough to cover cherries)
- 2 cups all-purpose flour
- 1/2 cup sugar, divided
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp fresh ground nutmeg
- 1/2 tsp salt
- 1/4 cup (1/2 stick) cold butter or margarine, cut into 1/2-inch cubes
- 1 egg
- 1/2 cup plain yogurt
- 1 tsp lemon or orange zest
Instructions
- Soak cherries in apple or grape juice at least 10 minutes. Drain well.
- In processor or bowl, mix flour, 1/4 cup of sugar, baking powder, soda, nutmeg and salt. Add butter or margarine and process or cut in with pastry blender until mixture has fine crumbs. Stir in egg, yogurt, zest and cherries.
- Turn dough out on lightly oiled 12x15-inch baking sheet. Lightly flour hands and pat dough into 9-inch round. With a knife, cut into 8 pie-shaped wedges. Sprinkle with remaining 1/4 cup of sugar. Bake in preheated 375-degree (F) oven until golden brown and firm to the touch, about 20 minutes.
Serve warm with butter and/or orange marmalade.
Makes 8 scones.
