    Classic Banana Bread

    List of Ingredients


    • 1/3 cup milk
    • 1 tsp white wine or cider vinegar
    • 2 cups all-purpose flour
    • 1 tsp baking soda
    • ½ tsp salt
    • ½ cup (1 stick) unsalted butter
    • 1 cup granulated sugar
    • 2 eggs
    • 1 cup mashed ripe bananas (about 3 bananas)


    Instructions


    1. Preheat the oven to 350° F.
      Combine the milk and vinegar in a small bowl and allow to stand for 10 minutes. Meanwhile, butter and flour a 9- x 5-inch, 3-inch deep loaf pan.

    2. Sift the flour, baking soda and salt into a large bowl.
      In a separate bowl, cream the butter with the sugar until pale and fluffy. Add the eggs, one by one, beating well after each addition. Fold in the mashed bananas. Add the sifted dry ingredients alternately with the milk mixture. Mix until just combined. Pour the mixture into the prepared pan.

    3. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean. Leave to cool in the pan for 5 minutes before turning out onto a wire rack. Allow to cool completely before serving.

      Makes 1 large loaf.
