    Coconut Bread

    List of Ingredients


    • 3/4 cup plus 2 Tbsp sugar
    • 1 large egg
    • 2 Tbsp peanut oil
    • 3 Tbsp canned cream of coconut
    • 1 cup milk
    • 1 tsp coconut extract
    • 3 cups all-purpose flour
    • 1 Tbsp baking powder
    • 1/8 tsp salt


    Instructions


    1. In a bowl with an electric mixer, beat together the sugar, egg, oil, cream of coconut, milk and coconut extract for 1 minute.

    2. Into a large bowl, sift together the flour, baking powder and salt. Stir the milk mixture into the flour mixture and pour the batter into a greased loaf pan, 9 x 5 x 3 inches.

    3. Bake the bread in a preheated 325º F oven for 55 minutes, or until it is pale golden around the edges, and let it cool on a rack.
