    Cranberry Quick Bread

    • 2 cups flour
    • 1 cup sugar
    • 1-1/2 tsp baking powder
    • 1 tsp salt
    • 1/2 tsp baking soda
    • 1 stick (1/2 cup) cold butter, cut into bits
    • 1 Tbsp freshly grated orange peel
    • 3/4 cup orange juice
    • 1 egg
    • 1-1/2 cups coarsely chopped cranberries
    • 1/3 cup chopped walnuts


    Instructions


    1. Blend together the flour, sugar, baking powder, salt, soda and butter using a food processor or in a bowl using a pastry blender until the mixture resembles coarse meal. Transfer the mixture to a large bowl.

    2. In a small bowl, whisk together the orange peel, juice and egg. Add the orange-egg mixture to the flour mixture. Stir the batter until it is just combined. Fold in the cranberries and walnuts.

    3. Pour the batter into a well-buttered 9x5-inch loaf pan. Bake the loaf in the middle of a preheated 350-degree oven for 1-1/4 hours, or until a tester comes out clean. Let the bread cool in the pan for 15 minutes, and turn it out onto a rack.

      Makes 1 loaf
