Cranberry Quick Bread

- 2 cups flour
- 1 cup sugar
- 1-1/2 tsp baking powder
- 1 tsp salt
- 1/2 tsp baking soda
- 1 stick (1/2 cup) cold butter, cut into bits
- 1 Tbsp freshly grated orange peel
- 3/4 cup orange juice
- 1 egg
- 1-1/2 cups coarsely chopped cranberries
- 1/3 cup chopped walnuts
Instructions
- Blend together the flour, sugar, baking powder, salt, soda and butter using a food processor or in a bowl using a pastry blender until the mixture resembles coarse meal. Transfer the mixture to a large bowl.
- In a small bowl, whisk together the orange peel, juice and egg. Add the orange-egg mixture to the flour mixture. Stir the batter until it is just combined. Fold in the cranberries and walnuts.
- Pour the batter into a well-buttered 9x5-inch loaf pan. Bake the loaf in the middle of a preheated 350-degree oven for 1-1/4 hours, or until a tester comes out clean. Let the bread cool in the pan for 15 minutes, and turn it out onto a rack.
