    Dried Cherry and Cream Scones

    From "Southern Living Homestyle Cooking"

    List of Ingredients


    • 2 cups all-purpose flour
    • 1 Tbsp baking powder
    • ½ tsp salt
    • ¼ cup sugar
    • ¾ cup chopped dried cherries
    • 1 Tbsp grated lemon rind
    • 1¼ cups whipping cream
    • 2 Tbsp unsalted butter, melted
    • 2 Tbsp sugar
    • 1 tsp grated lemon rind


    Instructions


    1. Combine first four ingredients in a large bowl. Stir in cherries and 1 tablespoon lemon rind. Add whipping cream, stirring with a fork just until dry ingredients are moistened.

    2. Turn dough out onto a lightly floured suface; knead lightly four or five times, just until dough holds together. Pat dough into an 8-inch circle on an ungreased baking sheet. Cut dough into 8 wedges; separate wedges slightly. Brush with melted butter. Combine 2 tablespoons sugar and 1 teaspoon lemon rind; sprinkle over dough.

    3. Bake at 400° F for 23 minutes, or until golden.
      Remove from pan. Serve warm, or cool on a wire rack.

      Makes 8 scones.
