    Full Moon Gingerbread

    List of Ingredients


    • 1 cup brewed, strong coffee
    • 1 cup dark molasses
    • 1/2 tsp baking soda
    • 2 cups flour
    • 1-1/2 tsp baking powder
    • 2 Tbsp ground ginger
    • 1/4 tsp ground cloves
    • 1/4 tsp ground nutmeg
    • 2 tsp ground cinnamon
    • 3 eggs
    • 1 cup dark brown sugar
    • 1 cup sugar
    • 3/4 cup vegetable oil


    Instructions


    1. Preheat oven to 350 degrees (F). Butter and flour a 10-inch bundt pan.

    2. Boil coffee and molasses together. Remove from heat and whisk in baking soda. (Mixture will bubble.) Cool to room temperature.

    3. Sift flour, baking powder and spices together. Whisk together eggs and sugars. Whisk in oil, then molasses mixture. Add flour mixture and stir well. Pour batter into prepared pan. Bake for about 50 minutes or until cake springs back when touched. Cool in pan for 15 minutes, then turn out to cool completely on a wire rack.

      Serve with whipped cream.
