Garlic Bread

List of Ingredients
- 2 tablespoons olive oil
- 1 to 3 cloves garlic, mashed
- 4 tablespoons (½ stick) unsalted butter
- 2 tablespoons chopped fresh parsley
- One 1-pound baguette
Instructions
- Set the rack in the middle of the oven. Preheat the oven to 400 degrees.
- Heat the oil in a small saucepan over low heat. Cook the garlic in the oil until it is soft, to remove the bitter raw taste. Do not let the garlic color. Remove the garlic from the heat and stir in the butter in thin slices. Mix to melt completely. Stir in the parsley.
- Slice the baguette lengthwise and spread the garlic mixture over the cut surfaces. Place the bread on a baking sheet cut sides up, and bake for 15 to 20 minutes, until the butter begins to bubble and brown.
Makes 6 servings
Final Comments
• To prepare ahead, wrap the unbaked garlic bread in foil and refrigerate overnight, if desired. To serve, unwrap and bake as directed.
