    Happy Rovin' Cowboy Lemon Coconut Loaf

    List of Ingredients


    • 2 sticks butter or margarine, softened to room temperature
    • 2 cups sugar
    • 3 Tbsp lemon juice
    • 4 eggs
    • 3 cups all-purpose flour
    • 2 tsp baking powder
    • 3/4 tsp salt
    • 1/2 cup evaporated milk
    • 1/2 cup milk
    • Grated peel of 2 lemons
    • 1/2 cup flake coconut
    • *

    • 1/2 cup lemon juice
    • 1 cup sugar


    Instructions


    1. Preheat oven to 350 degrees (F). Grease and flour two 8x4-inch loaf pans and set aside.

    2. In a large mixing bowl, beat butter, sugar, and lemon juice until fluffy. Add eggs, one at a time, beating well after each addition. Sift flour, baking powder and salt together. Combine evaporated milk and milk. Add dry ingredients and milk alternately to butter mixture in 3 additions. (Do not overbeat.) Fold in lemon peel and coconut. Pour into prepared pans.

    3. Bake for 1 hour and 20 minutes or until a toothpick inserted in the center comes out clean. Remove from the oven. Combine lemon juice and sugar; brush on tops of loaves to glaze. Cool for 20 minutes. Remove from pans and cool completely.

      Makes 2 loaves.
