Happy Rovin' Cowboy Lemon Coconut Loaf

- 2 sticks butter or margarine, softened to room temperature
- 2 cups sugar
- 3 Tbsp lemon juice
- 4 eggs
- 3 cups all-purpose flour
- 2 tsp baking powder
- 3/4 tsp salt
- 1/2 cup evaporated milk
- 1/2 cup milk
- Grated peel of 2 lemons
- 1/2 cup flake coconut

- 1/2 cup lemon juice
- 1 cup sugar
Instructions
- Preheat oven to 350 degrees (F). Grease and flour two 8x4-inch loaf pans and set aside.
- In a large mixing bowl, beat butter, sugar, and lemon juice until fluffy. Add eggs, one at a time, beating well after each addition. Sift flour, baking powder and salt together. Combine evaporated milk and milk. Add dry ingredients and milk alternately to butter mixture in 3 additions. (Do not overbeat.) Fold in lemon peel and coconut. Pour into prepared pans.
- Bake for 1 hour and 20 minutes or until a toothpick inserted in the center comes out clean. Remove from the oven. Combine lemon juice and sugar; brush on tops of loaves to glaze. Cool for 20 minutes. Remove from pans and cool completely.
Makes 2 loaves.
