    Mango Bread

    From "Sam Choy's Island Flavors"

    List of Ingredients


    • 2 cups all-purpose flour
    • 2 tsp baking soda
    • 1 tsp baking powder
    • 2 tsp ground cinnamon
    • 3 eggs, well beaten
    • ¾ cup canola oil
    • 1½ cups sugar
    • 2 cups peeled, diced fresh mango
    • ½ cup each: raisins, chopped macadamia nuts, and grated coconut


    Instructions


    1. Preheat oven to 350° F. Grease and flour two 9x5x3-inch loaf pans.
      Sift flour, soda, baking powder and cinnamon into a small bowl.

    2. In a large mixing bowl, combine eggs, oil and sugar. Combine with flour mixture; mix well. Fold in mango, raisins, macadamias and coconut. Pour into prepared loaf pans.

    3. Bake 45 to 60 minutes, or until bread is golden brown. Bread is done when a toothpick inserted in center of loaf comes out clean. Let loaves cool in the pans 10 to 15 minutes, then unmold and let cool completely on racks.

      Makes 2 loaves.



    Final Comments


    Choy writes, "You can make French toast with it. You can toast it...you can substitute mashed banana, grated carrot, or diced papaya for the mango."
