Mango Bread

List of Ingredients
- 2 cups all-purpose flour
- 2 tsp baking soda
- 1 tsp baking powder
- 2 tsp ground cinnamon
- 3 eggs, well beaten
- ¾ cup canola oil
- 1½ cups sugar
- 2 cups peeled, diced fresh mango
- ½ cup each: raisins, chopped macadamia nuts, and grated coconut
Instructions
- Preheat oven to 350° F. Grease and flour two 9x5x3-inch loaf pans.
Sift flour, soda, baking powder and cinnamon into a small bowl.
- In a large mixing bowl, combine eggs, oil and sugar. Combine with flour mixture; mix well. Fold in mango, raisins, macadamias and coconut. Pour into prepared loaf pans.
- Bake 45 to 60 minutes, or until bread is golden brown. Bread is done when a toothpick inserted in center of loaf comes out clean. Let loaves cool in the pans 10 to 15 minutes, then unmold and let cool completely on racks.
Makes 2 loaves.
