Old-Fashioned Crumpets

â—¦ 2 teaspoons honey
â—¦ ½ cup warm water
â—¦ 1 tablespoon active dry yeast
â—¦ 2 ½ cups all-purpose flour
â—¦ 1 teaspoon salt
â—¦ ½ teaspoon baking soda
â—¦ 1 ½ cups milk
Recipe
In a large mixing bowl, stir the honey into the warm water. Sprinkle the yeast in and let it sit for about 5 minutes, until it bubbles. Stir in the flour, salt, baking soda and milk. Cover and let sit for 30 minutes in a warm place.
Grease a frying pan as well as several round cookie cutters or biscuit cutters. Place the cutters in the pan and preheat over medium-low heat. Pour 2 to 4 tablespoons of batter into each cutter and cook until set, about 10 minutes. When the top is full of holes, the crumpet is ready to turn. Now carefully turn the crumpet and brown the other side for about 1 minute. Repeat the process until all of the batter is used up.
Serve warm with butter and jam, or slice the crumpets and fill with chicken salad.
Makes about 14 crumpets
