    Palisade Peach Bread

    List of Ingredients


    • 3 cups fresh peaches, peeled and sliced
    • 6 Tbsp sugar
    • 2-1/2 cups flour
    • 1 tsp baking powder
    • 1 tsp baking soda
    • 1/4 tsp salt
    • 1 tsp ground cinnamon
    • 1 to 1-1/2 cups sugar
    • 1/2 cup butter or margarine
    • 2 eggs
    • 1 cup pecans, finely chopped
    • 1 tsp vanilla extract


    Instructions


    1. Puree the peaches and 6 tablespoons sugar in a blender.

    2. Combine the flour, baking powder, soda, salt and cinnamon; set aside.

    3. Combine the remaining sugar and butter with an electric mixer until creamy. Add eggs and mix again. Add peach puree and the dry ingredients, mixing until all ingredients are well-combined. Stir in the pecans and vanilla extract.

    4. Pour batter into 2 greased and floured 9x5x3-inch bread pans. Bake in a preheated 325-degree oven for 55 or 60 minutes.

      Yield: 2 loaves

    Notes:

    Don't hesitate to use very ripe peaches for this recipe.

    This bread freezes well for those winter mornings when you need a reminder of summer's peach harvest.
