Pumpkin-Raisin-Walnut Quick Bread

- 2 cups unbleached all-purpose flour
- ¼ cup granulated sugar
- 2 tsp baking powder
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ¼ tsp baking soda
- ¼ tsp each: ground ginger and ground cloves
- ¼ tsp salt
- ½ cup chopped walnuts
- ¼ cup raisins
- 2 eggs
- 1 cup canned pumpkin purée
- ½ cup firmly packed brown sugar
- ½ tsp vanilla
- 5 Tbsp plus 1 teaspoon (1/3 cup) butter, melted
Instructions
- Heat the oven to 350° F.
Mix together the flour, granulated sugar, baking powder, cinnamon, nutmeg, baking soda, ginger, cloves and salt, stirring until combined. Stir in the walnuts and raisins; set aside.
- Beat the eggs in a medium bowl; mix in the pumpkin, brown sugar, vanilla and melted butter. Slowly fold this mixture into the flour mixture, mixing just until dry ingredients are moistened.
- Transfer batter to a greased, lightly floured 8½- x 4½-inch loaf pan; bake until loaf is well browned and a wooden skewer inserted in center comes out clean, 50 to 55 minutes. Let cool in pan 10 minutes; turn out onto a wire rack to cool completely before slicing, about 1 to 2 hours.
Makes 10 servings.
