    Pumpkin-Raisin-Walnut Quick Bread

    • 2 cups unbleached all-purpose flour
    • ¼ cup granulated sugar
    • 2 tsp baking powder
    • 1 tsp ground cinnamon
    • ½ tsp ground nutmeg
    • ¼ tsp baking soda
    • ¼ tsp each: ground ginger and ground cloves
    • ¼ tsp salt
    • ½ cup chopped walnuts
    • ¼ cup raisins
    • 2 eggs
    • 1 cup canned pumpkin purée
    • ½ cup firmly packed brown sugar
    • ½ tsp vanilla
    • 5 Tbsp plus 1 teaspoon (1/3 cup) butter, melted


    Instructions


    1. Heat the oven to 350° F.
      Mix together the flour, granulated sugar, baking powder, cinnamon, nutmeg, baking soda, ginger, cloves and salt, stirring until combined. Stir in the walnuts and raisins; set aside.

    2. Beat the eggs in a medium bowl; mix in the pumpkin, brown sugar, vanilla and melted butter. Slowly fold this mixture into the flour mixture, mixing just until dry ingredients are moistened.

    3. Transfer batter to a greased, lightly floured 8½- x 4½-inch loaf pan; bake until loaf is well browned and a wooden skewer inserted in center comes out clean, 50 to 55 minutes. Let cool in pan 10 minutes; turn out onto a wire rack to cool completely before slicing, about 1 to 2 hours.

      Makes 10 servings.
