    Southern-Style Biscuits

    From "Good Housekeeping Best Recipes 1999"


    List of Ingredients


    • 3 cups self-rising cake flour (unsifted)*
    • 1/3 cup shortening
    • 1 cup milk


    Instructions


    1. Preheat oven to 450 degrees (F). Into large bowl, measure self-rising cake flour. With pastry blender or two knives used scissor-fashion, cut in shortening until evenly combined. Stir milk into flour mixture just until ingredients are blended.

    2. Scoop dough by scant 1/4 cups onto ungreased large cookie sheet. If you like, with floured hands, lightly pat scoops of dough to smooth slightly.

    3. Bake biscuits about 15 minutes, or until lightly browned. Serve biscuits warm.

      Makes 12 biscuits.

      * If not using self-rising cake flour, substitute 1-1/2 cups all-purpose flour, 1-1/2 cups cake flour (not self-rising), 1 tablespoon baking powder and 1 teaspoon salt; cut in shortening and proceed as directed.
