â—¦ 1 cup (2 sticks) butter, softened
â—¦ 1½ cups sugar
â—¦ 1 teaspoon vanilla extract
â—¦ ¼ teaspoon lemon extract
â—¦ 4 eggs
â—¦ 3 cups all-purpose flour
â—¦ 1 teaspoon salt
â—¦ 1 teaspoon cream of tartar
â—¦ ½ teaspoon baking soda
â—¦ 1 cup strawberry preserves
â—¦ 1 cup chopped walnuts
â—¦ ½ cup sour cream
Recipe
Preheat oven to 350° F. Grease three 8 x 4-inch loaf pans.
In a bowl, cream butter, sugar, vanilla, and lemon extract until soft. Add eggs, one at a time, beating well after each addition. In another bowl, sift together flour, salt, cream of tartar, and baking soda. In a separate bowl, combine preserves, nuts, and sour cream. Add preserves mixture and dry ingredients alternately to butter mixture. Pour into prepared pans.
Bake for 50 minutes, or until a tester inserted into the center comes out clean. Cool on racks for 10 minutes before removing from pans to cool completely.
