    Swampscott Baking Powder Biscuits

    List of Ingredients


    • 2 cups all-purpose flour
    • 1½ Tbsp granulated sugar
    • 1 Tbsp baking powder
    • 1 tsp salt
    • ½ cup (1 stick) unsalted butter, cut into small chunks
    • ¾ cup light cream


    Instructions


    1. Preheat the oven to 425° F.

    2. Sift the flour, sugar, baking powder and salt into a large bowl. Gently rub in the butter, using your fingertips, until well incorporated. Add the cream and gently bring the dough together with a metal spatula or fork. Work the dough gently into a ball and knead briefly on a floured board.

    3. Roll out the dough into a flat disk about ¼-inch thick. Cut out 2½- to 3-inch rounds with a floured cookie cutter and place on an ungreased baking sheet. Bake for 10 to 12 minutes, or until golden. Serve immediately.

      Makes 8 to 10 biscuits.
