    Basic Cornbread

    List of Ingredients


    • 1/2 Tbsp unsalted butter or bacon fat, softened, plus 8 Tbsp melted
    • 4 large eggs
    • 3 cups buttermilk
    • 3 cups yellow cornmeal
    • 1 cup all-purpose flour
    • 1 Tbsp plus 1 tsp baking powder
    • 1 Tbsp sugar
    • 2 tsp salt
    • 1 tsp baking soda


    Instructions


    1. Preheat the oven to 375º F. Grease a 9 x 13-inch baking dish with 1/2 tablespoon butter.

    2. Combine the eggs, buttermilk, and 8 tablespoons melted butter in a large mixing bowl; whisk to combine. Combine the cornmeal, flour, baking powder, sugar, salt and soda in a large bowl; whisk to combine. Add the wet ingredients to the dry ingredients and stir until just combined.

    3. Pour the batter into the prepared baking dish. Bake until the top is golden brown and the edges have pulled away from the sides of the pan, 30 to 40 minutes. Remove the bread from the oven and allow it to rest before cutting into squares and serving.

      Makes 16 to 20 servings.
