    Very Lemon Blueberry Bread

    List of Ingredients


    • 1/3 cup stick margarine, melted and cooled slightly
    • 3/4 cup sugar
    • 3 Tbsp fresh lemon juice
    • 2 eggs
    • 1-1/2 cups sifted flour
    • 1 tsp baking powder
    • 1 tsp salt
    • 1/2 cup milk
    • 2 Tbsp grated lemon peel
    • 1/2 cup chopped walnuts
    • 1 cup blueberries
    • .

    • 1/4 cup fresh lemon juice
    • 1/4 cup sugar


    Instructions


    1. Grease and flour a 9x5-inch loaf pan. In a large bowl, combine the melted margarine, sugar and lemon juice. Beat in the eggs.

    2. Sift together the flour, baking powder and salt. Add the flour mixture to the egg mixture, alternating with the milk, stirring just enough to blend. Stir in the lemon peel, walnuts and blueberries.

    3. Transfer the batter to the prepared pan and bake in a preheated 350-degree oven 1 hour. Test for doneness. The bread may need 5 to 10 minutes more baking time, depending on the moisture content of the berries.

    4. While the bread is baking, stir together the lemon juice and sugar for the glaze. Let the bread cool in the pan 5 minutes. Unmold onto a rack and place the rack on a plate. Spoon the glaze over the bread. Let cool completely before slicing.

      Makes 1 loaf (14 slices).
