Winter Squash Chai Bread

List of Ingredients
- 1/2 cup sugar
- 1/2 cup (1/4 pound) butter, at room temperature
- 1 cup mashed cooked winter squash, such as butternut or acorn
- 2 large eggs
- 1/2 cup liquid chai concentrate
- 1 tsp vanilla
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1-1/2 tsp salt
- 2 tsp ground cinnamon
- 1/2 tsp each: ground cardamom, ginger, and black pepper
- 1/4 tsp each: ground cloves, nutmeg and allspice
- 1/2 cup chopped walnuts or pecans
Instructions
- Preheat oven to 350° F.
- In a large bowl, use a mixer to beat together sugar and butter until light and fluffy. Add squash, eggs, chai and vanilla, and stir until well blended. Add flour, baking powder, baking soda, salt, spices and nuts, and stir just until evenly moistened. Pour batter into a buttered 8-inch loaf pan.
- Bake until a toothpick inserted in center of bread comes out clean, 45 to 55 minutes. Let cool at least 10 minutes. Serve warm or cool.
Makes 1 loaf,
