Zucchini Bread

- 3 cups flour
- 1/2 tsp baking powder
- 1 cup pecans, chopped
- 1 cup Wesson oil
- 2 cups sugar
- 2-1/2 cups shredded zucchini
- 2 tsp baking soda
- 1-1/2 tsp cinnamon
- 1 tsp salt
- 3 eggs
- 2 tsp vanilla
Instructions
- Combine flour, baking powder and soda, cinnamon, and salt; add nuts.
- Beat eggs lightly in large mixing bowl. Add sugar, oil, and vanilla; beat until creamy. Stir in zucchini.
- Stir in dry ingredients, stirring only until moistened. Spoon batter into 2 greased and floured loaf pans. Bake at 350 degrees for 1 hour until done.
Cool bread in pans before removing.
Yield: 2 loaves.
