Recipe
Heat a small nonstick or well-seasoned cast iron skillet over medium-high heat. Add the butter and swirl it to coat the skillet.
Immediately crack the egg into the skillet. Add 1 teaspoon water to the pan (around the outside of the egg into the butter), cover, reduce the heat to medium-low, and cook for one minute.
Remove the egg from the pan immediately.
Season to taste with salt and pepper, and serve at once.
