"Aebleskivers are puffed Danish pancakes that are a cross between a pancake and a doughnut. Ideally they are made in an aebleskiver pan, which is a cast iron pan with seven rounded, 2¼-inch indentations. You can make these pancakes on a regular griddle, however."
List of Ingredients
â—¦ 2 cups all-purpose flour
â—¦ 2 tablespoons sugar
â—¦ 1 teaspoon baking powder
â—¦ 1 teaspoon baking soda
â—¦ ½ teaspoon salt
â—¦ 2 cups buttermilk
â—¦ 3 large eggs, separated
â—¦ 3 tablespoons butter, melted
â—¦ Toppings of choice, such as pure maple syrup, fresh fruit, and butter
Recipe
Preheat the oven to 200° F. Preheat an aebleskiver pan or large skillet over medium-high heat.
Sift the flour, sugar, baking powder, baking soda, and salt into a medium bowl. In a small bowl, whisk together the buttermilk, egg yolks, and butter. Add the buttermilk mixture to the flour mixture and stir just until blended. In a large bowl, beat the egg whites with a mixer until stiff. Fold them into the batter.
Grease the pan, and ladle â…“ cup of batter onto the pan for each pancake. Cook for 3 minutes, then turn over with a spatula and cook about 3 minutes. Don't let the pan smoke; adjust the heat as needed. Remove the finished pancakes from the pan and place on a heatproof plate to warm in the oven. Repeat until all the batter is used, greasing the pan as needed. Serve with toppings as desired.
