    B.E.C. Boat

    Source of Recipe

From "Tasty Ultimate" by Buzzfeed, Inc.

    Recipe Introduction

"Need to feed a hungry crowd in the a.m.? Pack your bags and grab your coat, because you and your besties are about to sail away on a mouthwatering breakfast boat full of bacon, eggs, and cheese. No Colby Jack? No worries, just substitute sharp shredded cheddar or Pepper Jack for an equally luscious take on the recipe. Lining a rimmed baking sheet with foil before you get started will ensure that cleanup is a snap...you won't even need to wash the pan afterward!"

    List of Ingredients

    â—¦ 8 large eggs
â—¦ 1 cup shredded Colby Jack cheese (4 ounces)
â—¦ ½ cup coarsely chopped cooked bacon (4 slices)
    â—¦ â…“ cup heavy cream
    â—¦ 2 scallions, thinly sliced
â—¦ Kosher salt and freshly ground black pepper
    â—¦ 1 baguette, 20 to 22 inches long and 2 ½ to 3 inches wide

    Recipe

Preheat the oven to 350° F. Line a baking sheet with foil. Crack the eggs into a large bowl and whisk until smooth. Stir in the cheese, bacon, cream, and scallions. Season with salt and pepper.

Using a paring knife, cut a long rectangle (1 ¼ to 1 ½ inches wide and 18 to 19 inches long) into the top of the baguette and partially hollow out the baguette, taking care not to tear any holes in the bottom or sides of the bread.

Place the baguette on the prepared baking sheet and spoon the egg mixture into the hollowed-out center. Bake until the eggs puff up and are cooked through in the middle, 20 to 25 minutes. Transfer the baguette to a cutting board, cut into 1-inch-thick slices, and serve.

    Serves 4
