    Bacon-Cheddar Cups

    From "Gooseberry Patch Christmas: 10th Anniversary"

    List of Ingredients


    • 12 slices white bread
    • 1 Tbsp butter
    • 4 slices bacon, crisply cooked and crumbled
    • ½ cup whipping cream
    • 1 egg, beaten
    • ½ Tbsp chives
    • ½ tsp onion powder
    • ½ cup shredded Cheddar cheese
    • Salt and pepper to taste
    • Garnish: cherry tomatoes, mushrooms


    Instructions


    1. Cut a 3-inch circle from center of each bread slice. Roll out each circle with a rolling pin to flatten slightly. Grease a 12-cup muffin pan with butter. Press one bread circle in each cup.

    2. Bake at 350° F for 7 minutes. Divide bacon among cups. Combine whipping cream, egg, chives, and onion powder; divide among cups. Sprinkle with cheese.

    3. Bake at 350° for 12 minutes. Let stand 5 minutes before serving. Garnish with cherry tomatoes or mushrooms.

      Makes 12 servings.
