Baked Cheese Omelette

List of Ingredients
- 1 dozen large eggs, separated
- 1/4 cup heavy cream
- 1/2 tsp salt
- Freshly ground black pepper to taste
- 3 ounces extra-sharp Cheddar cheese, grated
- Dash of cayenne pepper
- 1/4 cup (1/2 stick) butter
- 1 Tbsp minced fresh chives
Instructions
- Preheat the oven to 375°F.
- In a large mixing bowl, combine the egg yolks, cream, salt, and pepper and beat till well blended. In another bowl, whisk the egg whites with a pinch of salt till they form stiff peaks. Gently stir the yolk mixture into the egg whites, add the cheese and cayenne, and stir just until combined.
- Melt the butter in a large stainless-steel omelette pan or skillet just till it begins to sizzle. Pour in the egg mixture, stir for a few seconds, place the pan on the center rack of the oven, and bake till the omelette is puffy, about 8 minutes. Slide the omelette onto a large heated platter, fold it in half, and sprinkle the minced chives over the top.
Makes 4 servings.
