    Baked Egg Breakfast Sandwiches

    Recipe Introduction

    "Prep these breakfast sammies for safe storage in your freezer, and you'll always be a mere two minutes away from piping-hot breakfast goodness. (Or eat them for a late-night snack; we won't tell.) Just add bacon, turkey bacon, cooked sausage patties, or deli-sliced ham to each sandwich to customize, and wrap them in a damp paper towel then parchment paper, making sure to label and date the paper with a marker for quick-and-easy identification later. Store in an airtight plastic bag or container in the freezer for up to 1 month. When ready to eat, remove the parchment paper and microwave on high for 2 to 3 minutes."

    â—¦ Nonstick cooking spray
    â—¦ ¾ cup whole milk
    â—¦ ½ teaspoon kosher salt
    â—¦ ½ teaspoon freshly ground black pepper
    â—¦ ½ teaspoon garlic powder
    â—¦ 10 large eggs
    â—¦ 2 cups small broccoli florets, coarsely chopped
    â—¦ 1 small red bell pepper, finely chopped
    â—¦ ½ medium red onion, finely chopped
    â—¦ 6 slices deli-style Cheddar cheese
    â—¦ 6 whole-grain English muffins, split and toasted

    Recipe

    Preheat the oven to 375° F. Coat a 9-by-13-inch baking dish with cooking spray. Whisk together the milk, salt, black pepper, garlic powder, and eggs in a large bowl until smooth.

    Pour the eggs into the prepared baking dish. Sprinkle the broccoli, bell pepper, and onion evenly over the eggs. Bake until the eggs are set and golden brown on top, 20 to 25 minutes.

    Transfer the baking dish to a wire rack and cut the eggs into six large squares. Place a slice of cheese on each egg square, then sandwich the eggs with toasted English muffins. Serve hot.
