    Banana Nut Waffles

    List of Ingredients


    • 1-1/2 cups all-purpose flour
    • 2 tsp baking powder
    • 1/2 tsp salt
    • 2 tsp sugar
    • 2 eggs, separated
    • 1 cup milk
    • 1/3 cup unsalted butter, melted
    • 3/4 cup walnuts, chopped
    • 2 medium bananas, diced into 1/4-inch pieces
    • 1 Tbsp lemon juice


    Instructions


    1. In a medium bowl, sift together flour, baking powder and salt. Stir in sugar.

    2. In another bowl, combine the egg yolks, milk and butter; beat well. Add to dry mixture and beat thoroughly to combine all ingredients. Stir in walnuts. In a small bowl, stir together banana and lemon juice; fold into batter.

    3. In another bowl, beat egg whites until stiff; fold into batter.

    4. Cook waffles in a greased waffle iron until puffed and golden brown. Serve hot with maple banana compote and maple whipped cream.
