Banana Nut Waffles

List of Ingredients
- 1-1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 2 tsp sugar
- 2 eggs, separated
- 1 cup milk
- 1/3 cup unsalted butter, melted
- 3/4 cup walnuts, chopped
- 2 medium bananas, diced into 1/4-inch pieces
- 1 Tbsp lemon juice
Instructions
- In a medium bowl, sift together flour, baking powder and salt. Stir in sugar.
- In another bowl, combine the egg yolks, milk and butter; beat well. Add to dry mixture and beat thoroughly to combine all ingredients. Stir in walnuts. In a small bowl, stir together banana and lemon juice; fold into batter.
- In another bowl, beat egg whites until stiff; fold into batter.
- Cook waffles in a greased waffle iron until puffed and golden brown. Serve hot with maple banana compote and maple whipped cream.
